  • 1 box white cake mix

  • ¼ cup cake flour, sifted

  • 1 (3 oz) strawberry gelatin

  • 4 medium eggs

  • ½ cup water

  • ¾ cup vegetable oil

  • ½ cup strawberries, diced small

  1. Preheat your oven to 350°F and grease two 9-inch round cake pans.


  2. Mix the batter:

    In a large bowl, combine the cake mix, sifted flour, strawberry gelatin, eggs, water, oil, and diced strawberries.


  3. Beat until smooth:

    Using a mixer, beat on medium speed for about 3 minutes until the batter is smooth and well combined.


  4. Divide and pour:

    Evenly distribute the batter between your prepared pans.


  5. Bake:

    Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  • ½ to ¾ bag confectioners’ sugar (adjust to taste)

  • 1 tablespoon half-and-half (if needed)

    or juice of ½ lemon (for a less sweet option)


Directions

  1. Cream the base:

    Beat the cream cheese and butter together until smooth and well blended.


  2. Add sweetness gradually:

    Slowly mix in the confectioners’ sugar until you reach your desired sweetness and consistency.


  3. Finish the flavor:

    Add vanilla and a splash of half-and-half if needed for texture.


    Tip: If the frosting feels too sweet, a squeeze of fresh lemon juice adds the perfect balance.
