The combination of tender orzo, crisp vegetables, creamy feta, and a zesty homemade dressing gives it that perfect balance of texture and flavor.





Ingredients


For the Salad

  • 8 oz dry orzo pasta (cook according to package directions—use chicken broth instead of water for extra flavor)

  • 5 mini cucumbers or 1 large English cucumber, chopped

  • 1 pint cherry tomatoes, halved

  • ½ cup red onion, chopped

  • 1 (15 oz) can chickpeas, drained and rinsed

  • ½ cup crumbled feta cheese

  • ¼ cup fresh basil, chopped

  • ¼ cup fresh parsley, chopped


For the Dressing

  • ¼ cup lemon juice

  • ½ cup extra-virgin olive oil

  • 2 TBS white wine vinegar (or red wine vinegar)

  • 1 TBS minced garlic

  • 1 tsp sugar

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp Nature’s Seasoning (optional)




Directions

  1. Cook the orzo according to package directions, substituting chicken broth for water to enhance flavor. Drain and rinse with cold water to stop the cooking process.

  2. Prepare all salad ingredients and add them to a large mixing bowl.

  3. In a separate bowl, whisk together all dressing ingredients until well combined.

  4. Pour the dressing over the salad and mix well until everything is evenly coated.


Serve immediately at room temperature or chill before serving.


Make It Your Own

This recipe is easy to customize based on what you love or have on hand:

  • Add kalamata olives for a briny kick

  • Toss in toasted pine nuts for extra texture
