Giant Molasses Cookies: Soft, Spiced & Perfectly Cracked

There’s something magical about a cookie that fills your kitchen with the warm aroma of spices and comes out of the oven with that signature crackled top. These Giant Molasses Cookies do exactly that—and then some.


They’re soft and chewy on the inside, slightly crisp on the edges, and coated in a sparkling layer of coarse sugar that gives them just the right amount of crunch. This is the kind of recipe that feels like home, whether you’re baking for the holidays, sharing with friends, or just stocking your kitchen with something sweet and comforting.


I am always surprised when friends tell me this is their favorite cookie. I share this recipe often, and now you can too!




Ingredients


Dry Ingredients

  • 4½ cups all-purpose flour

  • 4 teaspoons ground ginger

  • 2 teaspoons baking soda

  • 1½ teaspoons ground cinnamon

  • ½ teaspoon ground cloves

  • ¼ teaspoon salt


Wet Ingredients

  • 1½ cups salted butter, softened

  • 2 cups sugar

  • 2 large eggs, room temperature

  • ½ cup molasses


Finishing Element

  • ¾ cup coarse sugar (Turbinado works beautifully)




Directions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

  3. In a mixer, cream butter and sugar until light and fluffy, about 5–7 minutes.

  4. Beat in eggs and molasses until well combined.

  5. Gradually add the dry ingredients to the wet ingredients in three batches, mixing until just combined. Be careful not to over mix.

  6. Chill the dough in the refrigerator for 30 minutes.

  7. Shape dough into 2-inch balls and roll in coarse sugar. Place 2½ inches apart on an ungreased baking sheet.

  8. Bake for 13–15 minutes, until the tops are beautifully cracked. Remove to wire racks to cool.



Make Ahead Tip

These cookies are great for planning ahead. To freeze:

  • Shape the dough into balls

  • Freeze on a baking sheet

  • Transfer to a freezer bag


When ready to bake, add an extra 2 minutes to the baking time—no need to thaw.
