There are some recipes that require careful planning, multiple pots and pans, and a long list of ingredients. Then there are recipes like this BBQ Meatball & Pineapple Bowl—the kind that practically makes itself while you get on with your day.
As much as I enjoy cooking, there are weeks when life gets busy and dinner needs to be simple. That's when I turn to my crock pot. Few kitchen appliances earn their keep like a slow cooker. Toss in a handful of ingredients, set the timer, and come home to a meal that's ready to serve.

This recipe is one of my favorite meal prep solutions because it delivers big flavor with very little effort. The sweet pineapple balances the smoky barbecue sauce, while the colorful peppers and red onion add freshness and texture. Served over rice, it's a complete meal that the whole family enjoys.
Another reason I love this recipe is that it makes a generous batch. The leftovers reheat beautifully, making lunch or dinner easy for the next few days. In fact, I often think the flavors are even better after they've had a little time to mingle.
Whether you're feeding a busy family, stocking the refrigerator for the week ahead, or simply looking for a dependable dinner that doesn't require much attention, this recipe deserves a spot in your rotation.
