Mexican Lasagna: A Layered Family Favorite

Some recipes just know how to show up and show out—and this Mexican Lasagna does exactly that. It’s hearty, flavorful, and layered with comfort in every bite. Think classic lasagna structure, but with bold Tex-Mex flavor that makes it perfect for weeknight dinners, potlucks, or stocking the freezer for later.
This dish brings together seasoned ground beef, beans, taco sauce, melty cheddar, and soft corn tortillas in a way that feels both familiar and fun. It’s easy to assemble, feeds a crowd, and tastes even better the next day. That’s what I call a kitchen win.

Ingredients
1 lb lean ground beef
1 onion, chopped
1 green pepper, chopped
1 TBS minced garlic
1 (15 oz) can tomato sauce
1 (8 oz) jar taco sauce
1 (15 oz) can kidney beans, drained and rinsed
½ tsp salt
1 tsp dried oregano
12 (6-inch) corn tortillas
2 cups cheddar cheese
Optional Toppings
Sour cream
Chopped cilantro
Sliced jalapeños
Extra taco sauce

Directions
Preheat oven to 350°F. Brown the ground beef in a large skillet. Add onion, green pepper, and garlic. Cook until vegetables are tender. Drain excess grease.
Stir in tomato sauce, taco sauce, kidney beans, salt, and oregano. Simmer for 10 minutes to let the flavors blend.
Spoon 1 cup of the meat mixture into the bottom of a 13 x 9 baking dish. Layer 6 tortillas over the meat. Top with half of the remaining meat mixture and sprinkle with 1 cup of cheese. Add remaining tortillas, then top with the rest of the meat mixture. Cover tightly with foil.
Bake for 25 minutes. Uncover and let stand for 5 minutes before serving.
Top with sour cream, taco sauce, jalapeños, and fresh cilantro. Serve alongside rice and tortilla chips for a complete meal.
