With a sweet and savory sauce, tender chicken, and bright pops of pineapple and peppers, it’s a tropical-inspired meal that practically cooks itself.


Using pre-cooked rotisserie chicken makes this recipe even easier, turning it into a true set-it-and-forget-it dinner. The sauce simmers slowly with the chicken, creating a delicious balance of tangy pineapple, rich teriyaki, and a touch of sweetness from brown sugar. Served over a bowl of warm rice, it’s comfort food with a little island flair.



Ingredients

  • 2 lbs cooked chicken(I like using one package of Member’s Mark Rotisserie Chicken Bites for convenience.)

  • 1 cup pineapple juice

  • ½ cup teriyaki sauce

  • ¼ cup ketchup

  • ¼ cup brown sugar

  • 1 tsp garlic powder

  • 1 tsp ground ginger

  • 2 TBS rice wine vinegar

  • 1 tsp pepper

  • 1 red bell pepper, chopped

  • 1 small red onion, chopped

  • 1 can pineapple chunks




Directions

  1. Prepare the sauce by combining pineapple juice, teriyaki sauce, ketchup, brown sugar, garlic powder, ground ginger, rice wine vinegar, and pepper. Whisk until well blended.

  2. Place the cooked chicken in the crockpot and pour the sauce over the top. Mix well to coat the chicken.

  3. Add the chopped red bell pepper and red onion on top.

  4. Cook on low for 3 hours. Add the pineapple chunks during the last 30 minutes of cooking.


Serve over rice and enjoy.
