Creamy Tuscan Chicken (Dairy-Free & Gluten-Free) 🌿🍗

I first made this dish for a dear friend who was preparing for hip surgery. She needed something nourishing, easy to reheat, and—most importantly—dairy-free. I wanted to create a meal that still felt indulgent and comforting without sacrificing her dietary needs. The result? A rich, flavorful skillet dish that she and her husband loved so much, it quickly became a favorite in their home.
This recipe proves that “dairy-free” doesn’t mean giving up creamy, cozy meals. With coconut milk, herbs, and sun-dried tomatoes, every bite is full of warmth and depth.

Ingredients
1 shallot, diced
1 TBS minced garlic
1 TBS Italian seasoning
1 tsp pepper
1 tsp salt
4 chicken thighs
2 TBS ghee or avocado oil
ÂĽ cup chicken broth
2 TBS arrowroot starch
1½ cups unsweetened coconut milk
½ cup sun-dried tomatoes
ÂĽ cup fresh basil, chopped
3 cups spinach
Directions
Chop the shallot and set aside.
In a small bowl, mix Italian seasoning, pepper, and salt.
Season both sides of the chicken thighs with the seasoning blend.
Heat a large skillet over medium heat and add the avocado oil (or ghee).
Add the chicken and cook for about 5 minutes per side, until nicely browned. Remove from pan and set aside.
In a small bowl, whisk together the chicken broth and arrowroot starch.
In the same skillet, sauté the garlic and shallot for 2–3 minutes until fragrant. Pour in the chicken broth and arrowroot mixture, stirring to combine.
Add the coconut milk, sun-dried tomatoes, and basil. Stir until the sauce begins to come together.
Add the spinach and cook until wilted.
Return the chicken to the pan and simmer for 3–4 minutes, allowing the flavors to meld.
Serve over rice and enjoy every creamy, comforting bite.
